Sacher Torte cake

Have you tried the Sacher Torte cake? This legendary dessert consisting of two layers of spongy chocolate cake, with a layer of apricot jam or cherries inside, covered entirely in a dark chocolate glaze. It is named after pastry chef Franz Sacher who created it in 1832 in the capital of Austria.

Apricot jam | 200g |
Chocolate ganache | 150g |
Mildly sweet sugar syrup | 100g |
Chocolate garnish | 50g |
Preparation
- Slice the sponge in 3 equal halves.
- Soak the sponge with sugar syrup evenly then layer it with apricot jam.
- Refrigerate the layered cake for 10-15 minutes.
- Finish the cake with melted chocolate ganache and garnish it.
