Traditional Basbousa aka Semolina (Rava) cake.

Semolina is a high-fiber staple of this traditional Egyptian called Basbousa. Basbousa is an Arabic word which means sweet, syrup-soaked semolina cake that originated in Egypt.

On this sweet note, we wish #EidMubarak to one and all.

Recipe Ingredients

For the base
Semolina 2 cups
Eggs 2
Butter ½ cup
Whole Milk ½ cup
Coconut Milk 2 tbsp
Powdered sugar 1cup
Baking powder 1 tbsp
Baking Soda ½ tap
Salt ½ tsp
Almonds ½ cup
For the syrup
Sugar 1 cup
Water ⅓ cup
Orange juice 2 tbsp
Rose Water 1 tbsp

Preparation

  1. Preheat the oven to 350 °F.
  2. Melt butter and let it cool.
  3. In large bowl, mix semolina, baking soda, baking powder, salt and sugar.
  4. Now, add butter, eggs and milk.
  5. Stir it all with fork until well mixed.
  6. Pour into 9x9 inch baking pan.
  7. Decorate top with almonds.
  8. Bake for 30 minutes and until top is golden.
  9. Meanwhile, make syrup by mixing sugar and water in a double boiler.
  10. Boil until sugar dissolves and mixture is clear.
  11. Add orange juice and boil one more minute.
  12. Pour into small dish. Cool completely.
  13. Remove cake from oven after 30 minutes.
  14. Pour thin layer of syrup on cake and bake in oven for 5 more minutes.
  15. Let it cool for 30 minutes.
  16. Cut into rectangles which is a specialty and serve.
