Traditional Basbousa aka Semolina (Rava) cake.

Semolina is a high-fiber staple of this traditional Egyptian called Basbousa. Basbousa is an Arabic word which means sweet, syrup-soaked semolina cake that originated in Egypt.

For the base
Semolina | 2 cups |

Butter | ½ cup |
Whole Milk | ½ cup |
Coconut Milk | 2 tbsp |
Powdered sugar | 1cup |
Baking powder | 1 tbsp |
Baking Soda | ½ tap |
Salt | ½ tsp |
Almonds | ½ cup |
For the syrup
Sugar | 1 cup |
Water | ⅓ cup |
Orange juice | 2 tbsp |
Rose Water | 1 tbsp |
Preparation
- Preheat the oven to 350 °F.
- Melt butter and let it cool.
- In large bowl, mix semolina, baking soda, baking powder, salt and sugar.
- Now, add butter, eggs and milk.
- Stir it all with fork until well mixed.
- Pour into 9x9 inch baking pan.
- Decorate top with almonds.
- Bake for 30 minutes and until top is golden.
- Meanwhile, make syrup by mixing sugar and water in a double boiler.
- Boil until sugar dissolves and mixture is clear.
- Add orange juice and boil one more minute.
- Pour into small dish. Cool completely.
- Remove cake from oven after 30 minutes.
- Pour thin layer of syrup on cake and bake in oven for 5 more minutes.
- Let it cool for 30 minutes.
- Cut into rectangles which is a specialty and serve.
